Grilled Chicken Over Squash Spaghetti

Ingredients:

2-3 cups spiralized squash

1 cup grilled chicken, chopped or shredded

1 avocado, pitted

2 cloves garlic, crushed

2 tbsp. coconut milk

2 tbsp. olive oil

2 tbsp. lemon juice

¼ cup sun-dried tomatoes packed in oil

Handful of fresh basil

Kosher salt and freshly ground pepper to taste

Directions:

Combine avocado, garlic, coconut milk, lemon juice, basil, salt and pepper in a food processor and pulse until they become smooth.

Pour a bit of olive oil in a medium skillet over medium heat and sauté the squash spaghetti until desired tenderness is achieved for about 8 minutes.

Stir in the avocado sauce, tomatoes and chicken until they are well combined. Cook until heated through. Add some water if the sauce is too thick. Turn off the heat and garnish with chopped basil.

Serve immediately and enjoy!
